The SEasOning
There are few things in this world that better exemplify summer than grilled meat and veg. A great BBQ sauce can take it to a whole other level, and this Guava BBQ sauce is one you should include in your repertoire for the upcoming summer months.
Most of the BBQ sauce you get in North America is usually dominated by American BBQ styles. I really enjoy these, but every now and again I get bored with them and I mess around with one to see if I can Caribbean-ize it.
Last year I made a version of this sauce that incorporated Tamarind to get that tang. While good, I think I was trying to do too much with it. This year I decide to simplify things a little. The result is a sauce that is sweet, tangy, spicy and quite literally stick to your ribs good.
This will take 30-45 min to prep and cook. It should leave you with ~ 1 cup of sauce.
The Ingredients
- 1 cup water
- 1 shot rum (I used a dark rum)
- 1 shot vinegar (I used apple cider vinegar, not because it’s some magic new age cure-all; it’s what I happened to have handy)
- 300 mL Guava Jam (if you’re watching your sugar intake look for Guava puree)
- Also, if you’re going jam route make sure you find a brand where guava is the first ingredient)
- 1/2 medium onion diced
- 2 cloves of garlic smashed
- 1 inch garlic rough chopped
- 2 tsp Lea & Perrins
- 2 tbsp soy sauce
- 2 tbsp ketchup
- 2 tbsp tomato paste
- 1/2 lemon juiced
- 1 hot pepper (wirri wirri was used here)
- Salt and pepper to taste
The Method
- Put everything into a blender and blend everything until smooth
- Put into a sauce pot over medium heat and cooked till reduced by a half. Adjust seasoning to taste with salt and pepper.
- Brush onto things you grill.

How innovative! I love guava so I’m keen to try making this. Where do you get your guava puree (and/or jam) and wiri wiri peppers from?
I got them both from the Caribbean Market on 12th. You can sub in just about any hot pepper you’d like. If you can’t get the jam you can also use fresh guava and add some sugar/honey in to adjust the sweetness.
